Cast Iron Skillet S’Mores Dip – Super Easy and Super Delicious Recipe

 

Today is the last day of 2017!

If I had an automatic  applause button next to me right now, I would definitely hit it!

Several times.

2017 has been a whopper of a year for me.

Though it has been the year that I have experienced the greatest amount of loss, it has also been a year to make me focus on my own, personal goals and what I really want out of my life.  It has been absolutely transformative, and though it has been absolutely painful as well, the transformation could not have been achieved without the pain.

So that’s the bright side I am determined to view.

Despite looking on that bright side, I am happy and relieved that 2017 is very nearly over.  And what better way to ring in the new year than with an extremely delicious (and easy!) recipe?

Confession time:  I love s’mores.

I’m not sure if that is really a confession, as s’mores are difficult not to like… The combination of melty marshmallows, chocolate and graham crackers are pure heaven!

2nd confession time:  I hate camping.

There.

I said it.

I really do.

Give me a cottage on a lake any day and I will very gladly take it over a tent.  While I don’t mind a good campfire and roasting marshmallows, I do not enjoy the camping that comes along with it.

So, imagine my delight when I was experimenting in my kitchen and discovered this summertime favourite treat can be made not only indoors, but during a blizzard!  (I live in Canada, so blizzards are a pretty regular occurrence around December!)

Not only are these delicious, but the prep work is super easy and quick, and they bake in the oven in just 5 minutes.

Preheat your oven to 450 degrees.

Then, get all of your yummy ingredients together.

You will need butter or a butter substitute like Earth Balance, chocolate chips, marshmallows and graham crackers for the dipping.

Using your butter or Earth Balance, grease the skillet.

This will making cleaning your skillet much easier.

Oh, and the chocolate chips will melt on to your graham crackers easier.

So, there’s that bonus.

Pour your chocolate chips into your skillet!

If you have little helpers like I do, this is a super fun thing for them to do!

Keep pouring those chocolate chips!

So.

Much.

Chocolatey.

Goodness.

Pat down the chocolate chips so that they are evenly layered on the bottom of your skillet.

Try not to pick out too many of them to taste.

Arrange your marshmallows on their sides in the skillet in a nice little circle.

Oh!  And there are vegan marshmallows, which I used, called Dandies!  They are delicious!  Give them a try!

Repeat.

And repeat.

You can give the middle marshmallow a little “boop” if you need to.

My little one enjoyed this part.

Then pop your skillet in the oven and wait for 5 minutes and unveil your glorious creation!

The dip needs to rest a further 5 minutes – the chocolate will continue melting and the marshmallows will continue to melt over the chocolate during this period.

Plus, the cast iron skillet will be very, very hot!

Cast Iron Skillet S’Mores Dip – The Foodie Mommy

Prep time:

5 mins

Serves:

4-12 (it totally depends on how much each person is going to eat!)

Ingredients:

  • butter or butter substitute like Earth Balance
  • 2 270g bags of chocolate chips
  • bag of large marshmallows (I used 44 here, but it’s not an exact science – it depends on how much you smush them together, but you want your chocolate chips to be covered) Also, there are vegan marshmallows that are super delicious! Try them out here: Dandies Vegan Marshmallows (3x10oz)
  • graham crackers for dipping

Method:

  1. Preheat your oven to 450 degrees.  You will be using the middle rack, so make sure that’s in place!
  2. Grease your skillet with butter or a butter substitute like Earth Balance.
  3. Pour both bags of chocolate chips into your skillet and pat them down to evenly cover.
  4. Place your marshmallows on their sides in your skillet in a circle.  Repeat, in a circular pattern, until all the chocolate chips are covered.  I used a 10″ skillet here but I imagine you can use a slightly larger or smaller skillet and achieve the same, delicious, results!
  5. Pop your skillet into your heated oven on the middle rack and let bake for 5-7 minutes.  I baked for 6 minutes, myself.  This is one of those recipes you should use your oven light for – watch those marshmallows carefully, as they can go from roasted to burnt super quick!
  6. Carefully remove from your oven – it will be hot!  Let it sit for 5 minutes to let all of the flavours fully melt together and get even more gooey.
  7. Dip in your graham crackers and scoop out the deliciousness.  The skillet will remain hot for awhile so be careful of your fingers – and your little one’s too!
  8. Enjoy!
