Banana Chocolate Chunk Muffins – Your Kids Will Love These!

January has been an endless bout of sickness for me and my kids.

Ugh.

Stuffy noses, fevers, coughs…

Nothing serious, which is a blessing, but my poor babies are getting very tired of feeling sicky all the time, and I totally get where they are coming from.

Has anyone else noticed the supreme amount of germs swirling around this winter?  I hope you are staying healthier than my littles!

Anywhoo, I managed to whip up these delicious muffins the other day, and by the next morning, 90 % of them were safely in my babies’ bellies.  They love them so much that I find it a challenge to keep a dozen in the house for more than an hour!

As soon as these muffins have cooled enough, their little hands are all over them, dosing their sweet faces with melted chocolate and filling their bellies with warm, deliciousness.

I substitute maple syrup for sugar in these muffins and bananas and apple sauce for eggs, making these a healthier option but no less tasty!

Give ’em a try and see if you can keep them in your house longer than I can!

Preheat your oven to 350 degrees.

Round up all of your ingredients.

Sometimes I like to pre-measure my ingredients so that I can quickly and easily do the prep work, but you don’t have to.

Also, it makes baking with my littles so simple, as all they have to do is add the ingredient, which is all ready to go!

Mash up your ripe bananas with a fork.

Mash away until…

Next, add some apple sauce.

I used unsweetened apple sauce here, as your muffins will be plenty sweet with the maple syrup, vanilla and chocolate chips.

Add your vanilla.

Add your pure maple syrup.

The pure part is important.

It needs to be the real deal!  May I suggest some lovely Canadian maple syrup?  It will be fantastic!

My little girl’s favourite part of this recipe is when she gets to lick the measuring cup out here.

You can do that too, if you like.

Give all of your wet ingredients a good stir until everything is nicely combined.

Sprinkle in your baking powder over the combined wet ingredients.

I stir those up and then add a dash of salt.

Then pour in your whole wheat flour!

Start stirring everything together.

Stir until just combined.

Be careful not to over stir – this will result in your muffins being too tough!  After all, these are muffins, not cookies.

Stir up your batter until just combined.

Scoop your batter into a greased, dozen muffin pan.

I used my 1/3 measuring cup, as it is nearly the perfect size and it makes my life easier.

However, you can choose whatever makes your life easier!

Pop your muffins in the oven for 22-25 minutes and then…

Banana Chocolate Chunk Muffins – The Foodie Mommy

Prep time:

10-15 minutes

Serves:

12 muffins

Ingredients:

  • 3 ripe bananas
  • 1 cup apple sauce
  • 1 tbsp vanilla
  • 1/2 cup pure maple syrup
  • 1 tsp baking soda
  • 1 dash salt
  • 2 cups whole wheat flour
  • 1 cup chocolate chunks

Method:

  1. Preheat your oven to 350 degrees.
  2. Grease your muffin tin with butter or a butter substitute like Earth Balance.
  3. In a large bowl, mash the bananas and pour the apple sauce, vanilla and pure maple syrup over the mixture.  Stir to combine.
  4. Sprinkle the baking soda over the mixture, and give it a quick stir.
  5. Sprinkle in your dash of salt and then pour in your flour.  Stir until the ingredients form a batter.  Do not over mix, as this will make your muffins tough!
  6. Fold in the chocolate chunks and divide in a greased muffin pan equally.  I use a measuring cup scoop (1/3 cup) to add the batter to the muffin pan, but you could use a spoon or even an ice cream scoop.
  7. Bake for 22-25 minutes, or until a toothpick inserted in the center of your muffins comes out clean.
  8. Enjoy!

 

 

 

 

Momstrology – Book Review – An Astrological Guide For All Mamas!

Have you ever wondered if your baby or child’s star sign influences their behaviour or mood?  Do you ever notice that your little guy goes a little wild during a full moon?  Or is your little girl bull headed and stubborn?  It may be their star sign!

I was curious, myself.  Sure, I’ve read my astrology in the back of magazines as I waited in the dentist office, but that was really the extent of the knowledge I had of my star sign.

With everything that 2017 brought me, I found myself searching inward and deeper.  I felt very lost and felt that if I had some further insight, some further knowledge about myself, it would assist me in finding the answers for my current situation, as well as help guide me down the right path for my future.

Which brought me here, to this book!

I discovered the AstroTwins on Instagram, quite randomly – or, as the universe would say, quite deliberately – and I was led to their book, Momstrology.  I read about my babies’ star signs first, and then lapped up their insights on my own sign as a mother next.

And, let me tell you, it was eerily accurate!

My little guy is a Cancer baby, and he did not leave my arms for…oh…about the first six months of his life!  I am not even exaggerating – he co-slept (and still does), as he would scream at the top of his lungs each time I set him down in his own crib.  He loves to be with me, to be held, to be cuddled, and to nurse.  Now, granted, newborns and young babies and kids need all of these things to feel loved and secure – and my daughter received lots and lots of attention, holding, cuddling and nursing as well.

But my little Crab was on a whole new level!

And he still is, a year and a half later!

Just as an example, at his six week check up with the midwife, she took him to change him out of his clothes and diaper so that she could weigh him accurately.  I was a mere two feet away and the process only lasted about a minute, but he screamed and screamed, and searched for me, and then made lasting eye contact with me.  Minke, my midwife, said she’s never seen a newborn search and maintain eye contact with their mother like that before.

Oh, and the fact that he gained almost 10 pounds in his first 6 weeks of life, may give a hint of just how much he loved to nurse.

Crabs are the sign associated with the chest, so it’s not actually surprising that my guy loves to nurse.

Could I have used this knowledge when he was first born?  Would it have made my life easier to anticipate that he would be a little tiny baby kangaroo who needed this kind of constant contact and nursing?

Absolutely!

Was it also fun and entertaining to read about my perspective as a mother?

Definitely!

Do I think that all mamas would love to read this to gain insight on not only their children, but themselves?

Without a doubt!
